Our signature flavoring is mixed with the coffee during the roasting process while it is still warm. That way, as the beans cool down, the process speeds up the absorbtion of the flavoring - yeilding a beautifully balanced cup of flavored coffee.

This is a misconception. Traditional espresso is not dark-roasted. Traditional espresso is a particular blend of coffees roasted medium-dark. Together as they're roasted in a particular ratio, that makes espresso as we know it.
If you go to Italy, you will never see dark-roasted coffee in their espresso machine at the bar.
Ideally, no one shold buy more than 30 days worth of coffee.
When you roast coffee, it develops and continues to reach it's optimum at about 3 days. At that point, it is at its best flavor. From then on, it is good for about 2 to 3 weeks. After that, you'll notice it will lose flavor, zest, and high notes.
